Recipe: Today's Lunch...YUM!

My intention have always been to write recipes on here, and I will! Besides exercise being my number 1 passion, food follows close behind at number 2. I have learned over the years how to be thrifty with food, creating dishes simply using whatever is on hand in the fridge or pantry. Therefore today's lunch was based off of items in the refrigerator that needed to get used and it was delicious! Now let me preface this with saying, I am not a baker. I simply like to cook and eat. I do not like being precise or measuring things. So these measurements are loosely based on what I threw into the bowl. My apologies, this is not a vegetarian dish :(


Mix the following ingredients in a medium bowl:

1/4 cup Mayonaise

1 or 2 tbls of Apple Cider Vinegar (depends on how acidic you want it)

1 clove of garlic minced (I LOOOOVE garlic!)

salt & pepper


Add:

2 cups of shredded chicken

1 apple diced

2 tbsp of pumpkin seeds


Mix everything together and then place 2 heaping spoonfuls into a piece of bib or iceberg lettuce. Wrap it up and enjoy!
